Strawberry Chocolate Chip Cookies

Why yes… these are absurdly pink. They’re also super simple to make and pretty tasty. They do use cake mix, I grant — I don’t know of anything else that would lend that lovely pink hue — and that certainly makes them simpler and quicker to mix up (and means fewer measuring implements to wash). These go from ingredient to cookie pretty quickly (though they certainly benefit from some sitting time — makes them a lot less sticky).

Strawberry Chocolate Chip Cookies, scarcely adapted from Sally’s Baking Addiction

1 box (18ish oz.) strawberry cake mix
1 tsp. baking powder
1/3 c. oil
2 eggs
1/2 tsp. vanilla
1 1/4 c. chocolate chips*

Preheat the oven to 350F. Line one or two cookie sheets with parchment and set them aside.

Dump the cake mix in a bowl and stir in the baking powder. Beat the oil, eggs and vanilla together (I did so in the oil measuring cup) and pour those into the cake mix, stirring vigorously until all the cake mix lumps are gone. Add the chocolate chips and stir them in.

Let the dough rest for 10-15 minutes so it gets less sticky, then roll it into balls (ping pong ish size or a little smaller) and smoosh them down a little. Bake for ten minutes — take them out before they get brown! — and pull them, letting them cool for a few minutes on the baking sheet before moving them. They’ll be super soft! Nom with milk.

*I used milk chocolate since that is the preference of the roommates, but I think dark would have worked better. The cake mix is more unambiguously sweet than actual strawberries, so the bitterness of dark chocolate would counterpoint it nicely.
