Brussels Sprouts with Bacon and Onion

Okay, sure, bacon is cheating. But man, these are super tasty! I could have eaten them all up myself, though I sadly had to share. This is another side inspired by a restaurant, though this one is a bit further from the restaurant offering — Haven‘s Brussels sprouts are delicious beyond the telling! I didn’t put any lemon juice in these, which probably has something to do with it. I’ll have to keep that in mind. Anyway, these are dead simple, and if you buy shaved Brussels sprouts they’re a snap to make.

Brussels sprout enthusiasts seem to be in the minority, yet everyone in my house suddenly became one when confronted with these, so I say unto you the following: cheat! Use the bacon! It makes for delicious flavor all throughout the sprouts and as the occasional salty, crunchy surprise.

Brussels Sprouts with Bacon and Onions

10 oz. Brussels sprouts, quartered or shaved
1 medium onion, diced fine
3-4 slices bacon, cut in lardons

Put the bacon lardons in a cold skillet and heat over medium heat until the bacon is crisp and the fat is rendered. Remove the bacon with a slotted spoon and set aside. Add the onion and cook until it’s beginning to brown at the edges, about 10 minutes. Add the sprouts and turn up the heat to medium-high. Cook, stirring frequently, until the sprouts are bright green and beginning to caramelize at the edges. Put the bacon back in and toss to warm it up. Serve!
