Brown Butter Vanilla Crisp Rice Treats

Okay, y’all, I know these don’t look like much. But DAAAAAAAAAAAAAAAAMN. They didn’t last a day. The changes are pretty subtle, but if you have humans in your house that like these things, they’ll be gone in a flash. They’re not notably harder to make than the normal back-of-the-box version — a couple extra minutes to brown the butter, and you can split the vanilla bean while it’s melting — but good lord are they tasty.

Brown Butter Vanilla Crisp Rice Treats, adapted from Smitten Kitchen and Crepes of Wrath

4 oz. (8 Tbsp./1 stick) butter
1 10-oz. bag marshmallows
1 vanilla bean, split and scraped
6 cups crisp rice cereal

Grease an 8×8 pan and set aside.

Melt the butter in a saucepan over medium heat. It will foam. Be attentive. Stir and scrape the bottom of the pan. Once it’s through foaming, the solids will start to brown very slowly — and then they’ll speed up, so you need to stand over it once the foaming is through. Get the solids a nice nutty brown and kill the heat. Stir in the marshmallows and keep stirring until they’re melted and the mixture is smooth. Add the vanilla bean seeds and stir more, until the brown flecks are evenly distributed. Stir in the rice cereal until evenly coated.

Press the mixture into the pan with greased hands and let it cool. Devour with mad hunger.
