Orange Yogurt Cake

What? Another cake based on fresh summer fruit? Me? Never!

I mean, okay, roommate’s teacher sent roommate home with a bunch of oranges from the tree in the yard, but certainly that wasn’t the inspiration for this cake. The giant tub of yogurt was; that I had the orange was simply a bonus. This cake isn’t too sweet, with a good orange flavor — though I think it could use some chocolate chips, since I love chocolate and orange together. A lot. Seriously, this one local place does orange chocolate chip cupcakes with chocolate orange buttercream around Halloween and I’d shiv someone, those things are that good. The texture could be a bit nicer — it’s a little gummy, and would perhaps be more tender if I’d used full-fat yogurt as the recipe called for, so I’d recommend that. (I used the yogurt I had.)

Orange Yogurt Cake, adapted from Mad Hungry

1 c. all-purpose flour, sifted
1/2 c. plus 2 Tbsp. sugar
1/2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. kosher salt
1/2 c. whole-milk yogurt (plain)
1/4 c. vegetable oil
1 egg
zest of one orange
2 Tbsp. juice from same orange
1/2 tsp. vanilla extract

Preheat oven to 350F; grease a 9″ cake pan and set aside. Whisk ingredients together in a bowl. Pour batter into the greased cake pan and bake for 18 -22 minutes, or until a toothpick comes out clean or with only small crumbs when inserted into the center of the cake (try a few spots). Garnish with powdered sugar if desired and serve.
