Marshmallow Booze Milk Cake

Marshmallow booze cake!

Yeah, I’ll post something without a mix eventually. All these desserts with Mixes And Stuff in them are a bit unusual for me, but you wouldn’t know it by the recipes I’ve posted, eh? Anyway. Vanilla-y, milky cake with marshmallow booze. Hard to go wrong. Even if it only has a couple kinds of milk. Make this with your favorite cake; all the recipe-ing is done after it’s baked, and it shows off the marshmallow flavor pretty well.

Marshmallow Booze Milk Cake

Small vanilla cake mix (for a 8×8 cake) and eggs/oil/etc. as instructed on box
1 c. milk
1/3 c. marshmallow vodka

Whipped Cream Frosting:
1/2 c. whipping cream
1/4 c. marshmallow vodka

Bake cake as instructed on the box. (I use Trader Joe’s vanilla cake & baking mix because it’s simple and pretty damn tasty for a mix.) While it’s still warm and in the pan, poke it a bunch with a skewer. Mix the milk and the marshmallow vodka  and pour slowly over the cake, making sure to get it everywhere, so you don’t have sober cake. No one wants sober cake*. Cover and refrigerate overnight.

The next day, whip the whipping cream, mixing in the vodka after you get some good texture going. Ideally it will be lightly sweet, a bit marshmallowy and not terribly boozy-tasting despite the cake’s name. Spread on top of the cake. Slice and serve!

*Plenty of people want sober cake. Don’t give them this one.
