Pudding Mix Cookies

Pudding Mix Cookies!

I’m not a huge fan of the commonly-available white baking chips, but they were fairly tasty in these cookies — especially the ones on the bottom that caramelized. Their recipient declared them delicious and had to leave them at home lest he eat the whole bag at work. Success!

Pudding Mix Cookies, adapted from Kraft

1 c. butter, softened
1 c. packed brown sugar
1 pkg. (3.9 oz.) chocolate instant pudding
2 eggs
1 tsp. vanilla
1 tsp. baking soda
2 c. flour
12 oz. bag white chocolate chips if you can find them, or white baking morsels

Preheat the oven to 350F.

Cream together butter and sugar until they’re fluffy. Stir in the pudding mix carefully, lest you be enveloped in a cloud of chocolate that really shouldn’t end up in your lungs. Blend in the eggs, vanilla and baking soda before mixing in the flour in a few doses. Mix in the chocolate morsels last.

Drop spoonfuls of dough onto cookie sheets. Bake for 10-12 minutes or until they’re set on the edges and a wee bit squidgy in the center. Let ’em cool on the pans for a minute, and then move them to a rack.

Mail them far away and let your friend enjoy!
