Chocolate Banana Baked Oatmeal

No, that is not actually a pan of round brownies. (Round brownies would be an abomination anyway. I want more corners, not fewer!) The crackly top is quite lovely, though, and they do smell amazingly chocolatey and bananaful. Bananish? I’m not sure which. Anyway! It’s tasty and not super unhealthy.

Chocolate Banana Baked Oatmeal, adapted very slightly from Budget Bytes

3 large bananas
2 large eggs
1/2 cup unsweetened cocoa powder
1/2 cup brown sugar
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2 cups milk
2 1/2 cups old-fashioned oats

Preheat the oven to 350F. Mash your bananas in a largish bowl until they are pleasantly squidgy, then stir in eggs, cocoa powder, brown sugar, vanilla, salt, baking soda and baking powder. (If you’re feeling super energetic, you can sift your cocoa to de-lump it; just keep an eye out otherwise and you should be fine.) Once those are thoroughly mixed, whisk in the milk and then the oats. Pour the lot of it into a greased 8″ square or 9″ deep dish pie tin, and set that on a cookie sheet. Bake for 40-45 minutes, until your house smells like brownies and you can’t stand it any more. Then eat! Probably it would be best if you let it rest a little, but I won’t tell if you don’t.
