Pot Pie Fail Chicken Soup

So I misread a recipe and royally screwed dinner last night. It was supposed to be chicken pot pie. Fortunately, it turned into a pretty tasty soup!

Pot Pie Fail Soup, adapted a little too much from Manger a Trois

6 Tbsp. butter, divided
1/2 c. flour
4 c. chicken stock
1 1/2 c. milk
4 cups cooked, shredded chicken
3 Tbsp. sherry
1 Tbsp. lemon juice
Pinch nutmeg
2 carrots, 2 stalks celery, and 1 large onion, chopped fine (or 1 container Mirepoix from your local market)
Salt and pepper to taste

Melt 4 Tbsp butter in a saucepan. When it starts to bubble, add the flour and mix well. It will be a sort of playdough ¬†consistency. Let it cook a bit and add the stock a little at a time, whisking well so there are no lumps. Once that’s in, add the dairy and the chicken. Add the sherry and nutmeg when it’s heated through, and then taste for seasoning; add salt, pepper and lemon juice as needed.

Meanwhile, melt the other 2 Tbsp butter in a large skillet. Cook the carrot, onion and celery until soft. Add the chicken mixture to the skillet and stir until combined. Simmer for a few minutes and then taste for seasoning again.

Serve with some sort of bread product. I had leftover pie crust, so I sprinkled it with Parmesan and ate that — palatable but not special.
