Mustard-Breaded Pork Chops

I wasn’t sure the roommates would like these (I’m the mustard lover around here), but they got a reasonably good review, and I certainly thought they were tasty.

Mustard-Breaded Pork Chops, adapted from Ready Set Eat

6 thin bone-in pork chops
salt to taste
1 egg
2 Tbsp. whole-grain mustard
1 Tbsp. Dijon mustard
3/4 c. panko bread crumbs
1 tsp. paprika
1 tsp. pepper
4 Tbsp. oil, divided

Mix the mustards and the egg  in a shallow dish — the mixture will be thicker than usual, and that’s okay. Mix the panko, paprika, and pepper on a plate. Dry and salt the pork chops, then dip them in the mustard and egg mixture, and then coat each one with the panko mixture.

Heat 2 Tbsp. oil in a non-stick skillet over medium heat. Add three chops and cook for 5 or 6 minutes, until brown. Flip ’em and cook the other side the same amount, until cooked through. Remove those to people’s plates and add more oil if necessary before cooking the rest of the chops.
