It’s delicious, it’s creamy, it’s really hard to photograph attractively, particularly with a phone!


1 avocado
1 clove garlic
1 Tbsp. lime juice or juice and zest of one lime
2 Tbsp. chopped fresh cilantro (chop yours finer than mine!)
2 Tbsp. finely chopped red onion
1/4 c. finely chopped tomato*
salt and pepper to taste

Mash the flesh of the avocado in a bowl and add grated or super finely minced garlic and lime juice. Stir that up so the garlic gets nice and limed and won’t brown while chopping the cilantro, red onion and tomato (honestly, I only use tomatoes when they’re in season, and they’re not right now). Add the cilantro, red onion, tomato, a few grinds of pepper and a firm sprinkle of salt and taste. If it’s too rich, add more lime; if it’s bland, add a bit more salt. You can also add a finely diced jalapeno if you like it a bit spicier.

Remember when you’re salting the guacamole that you’re probably going to serve it with tortilla chips — take the saltiness of your chips into account.
